1. Chop and saute whatever veggies you have on hand. (I used zucchini, yellow squash, pepper, onion, and tossed in some spinach at the end)
2. Add eggs or Egg Beaters (2 cups)
3. Allow it to sit on the burner for a few minutes until it all starts to firm up a little.
4. Pop the skillet into a 350 degree oven until it's good and solid (20ish minutes)
5. Sprinkle with some cheese if you like - I used a little low fat feta!
(Side note: After you remove the skillet from the oven and set it down to cool, do not attempt to move it using the handle because the handle will be 350 degrees and burn your hand. I may or may not know this from personal experience...)
