Tasty Tuesday - Pumpkin Oatmeal

During the cooler months, I LOVE having baked oatmeal for breakfast.  I recently saw a recipe on Pinterest that I wanted to try, but I did tweek it.  I am loving the results, it tastes so yummy!

Pumpkin Spice Oatmeal

1 1/2 cups regular oats (quick cooking or not)
1 1/2 cups steel cut oats
2 tsp baking powder
1 tsp cinnamon
1/8-1/4 tsp each of assorted "Fall-ish" spices (I used pumpkin pie spice, cardamom, ginger, and allspice)
1/2 cup sucanat
1 cup pumpkin puree
1 cup coconut milk
1 tsp vanilla
2 eggs

1.  Mix the dry ingredients together.
2.  Whisk the wet ingredients together.
3.  Stir the wet ingredients into the dry and pour into a baking dish. (8x8 or a pie plate)
4.  Refrigerate overnight.
5.  The next morning, bake 40-45 minutes in a 350 degree oven.
