The local paper and my gym are sponsoring a contest called the "Health Challenge" and I've entered! The winner of the contest gets 5 months of gym membership, personal training, and nutrition counseling. Plus they will blog along their journey and share before/after photos.

Fit Tip Friday - Treats!

Tis the season for 2 of my favorite foods: the Shamrock Shake and the Cadbury Egg. At this point in the year, I normally would've had at least 3-5 o each by now. But, as you know, this year had to be different!

So, did I swear off these 2 sugar filled treats for good? No. I made myself this deal: 1 shake and 1 egg allowed, and only the weekend of the actual holiday that they stand for.

Today, I had my shake. Was it good? Yes.

Do I wish I'd had a few more already? No. Because before I got this shake, I was in the dressing room at Target trying on new Capri pants because all of mine are too big now.

And that cliche "nothing tastes as good as thin feels" - is something I am living right now.

The shake is good, but smaller pants are better.

An Amazing Giveaway!

Last month, I was invited by the nice folks at Revell publishing to review a newly published book.  They work with the gang at (in)courage where I was a guest poster last October.  I was excited for the opportunity because the book is by Holley Gerth and I love her writing

The title alone was enough to make me excited to dive into this book!

If you’re still not convinced, pick up a copy of Holley’s book.  Grab a mug of coffee, a pen, your favorite blanket, and curl up on the couch.  Be ready to laugh and to cry.  There were times when I was reading this book that the words literally took my breath away and I had to put the book down and take a moment to just pray.  Another bonus, the book has questions at the end that are perfect to use for your next study or book club!  

This book will encourage your heart, girlfriend!  It will remind you of the Truth – that YOU are a dearly loved, redeemed, forgiven, and grace covered child of God.

Tasty Tuesday - Grilled Pesto Pizza

This great weather means one fabulous thing in the world of cooking - grilling!! Last night I grilled pizza for the first time. My mom is awesome at this, so I decided to give it a try.

This pizza doesn't have a major ingredient list, and you can make it with any toppings you want!

I used:
1 Pillsbury pizza crust
Pesto (4 ice cubes of it that my mom made from my herb garden last summer)
Veggies (spinach, zucchini, asparagus, and mushrooms were my choices)
Crumbled goat cheese
Mozzarella cheese
Garlic salt
Olive oil

1. Stretch the crust out on a piece of aluminum foil that has been coated with oil or cooking spray.
2. Brush the other side of the dough with oil.
3. Invert the foil onto a hot grill and peel away.
4. Flip the dough once it has cooked on one side.
5. Spread the cooked side with pesto.
6. Lay out the veggies on top.
7. Sprinkle with goat cheese, mozzarella, and garlic salt.
8. Let the pizza on the grill until the cheese melts.

Enjoy! The pesto adds great flavor. I didn't want to stop eating this!
